Pitched and fermenting at 65 F. Added 2.2 g yeast nutrient in 100 mL water (heated to 180 F) (retroactively measured OG from a jar in the fridge) |

Bubbles just starting to slow down to about one every 4 or 5 seconds. Bumped temperature to 67 F (carboy thermometer currently reads about 67 F, fridge was set at 65 F). |

Airlock bubbles finally starting to slow down, a bubble per 10 seconds or so. Krausen dying down to a thin layer. Yeast still visibly moving in the body of the cider. |

Bumped up to 68 F. Airlock every 13 seconds or so, krausen almost gone, yeast really settling out now. |

Bumped up to 69 F. Added 1 oz oak cubes soaked for 1 week in vodka (poured off vodka and saved that for later). Added 1 oz each of Mandarina Barvaria and Huell Melon. |
