Spot on SG! 1052 is what it called for but it finished a little higher. As long as I didn't contaminate the beer I think this one will turn out well. |

So, ususally the next day my beers are blowing the airlock off my fermenter and causing me to switch to a blow off tube. This one is much slower. My hand accidentily touched the wort so I'm hoping I did not mess it up with bacteria. I guess we will see. |

looks like the fermentatin is taking off now. Started a bit slow as compared to previous batches but looks good now. the gas coming from the fermenter smells like rotten eggs so I'm hoping that is normal. A few blogs mentioned this is normal for honey and wheat type yeast.

just took another reading and looks like its ready to bottle. 7 Brix or 1013. final reading should be around 1012. Unfortunately I don't have enough empty bottles to do it. time to start drinking! |

so the final reading was around 6 brix. The smell of rotten eggs is not present in the final product but it is rather astringent. I'm hoping it mellow over the conditioning periond. All in all I'm not too psyched about this batch but I think it will be drinkable. |

After reading through John Palmers book it seems I may have made an error by stirring up my fermenter and allowing some of the krausen to get back into the beer. This can cause an astringent flavor in the beer and its seems to have done just that in mine. Hopefully it will mellow while conditioning in the bottles. |

Way way over carbonated. I'm not too sure what caused it. Maybe too much priming sugar? I have to open one, have it foam for about 5 minutes and then pour the rest. The beer tastes good so I don't think it's improper cleaning. I'll try less priming sugar next time. |
