I split the batch between two fermenters, one with roughly 1.5 gallons and the other with roughly 4-4.5 gallons. Hard telling exactly how much I got - also left about 1/10 of a gallon in the kettle. I shouldn't have topped up the way I did pre-boil. |

Put both fermenters in the ferm chamber as they were still 88 degrees. Cooled down to 9 C (49 F) overnight. |

Pitched yeast. Two packs of WLP833 went into the 1.5 Gallon batch. Two packs of 34/70 (re-hydrated) went into the 4-4.5 gallon batch. |

I assume that fermentation has started. Hard to tell since the airlocks aren't "bubbling" away as expected though there does seem to be some pressure (at least in the 34/70 batch) ... There could be a slight air leak so I will just pull a small sample of both in a couple days and see where we're at. |

I let the temp rise to 12 c. Things are moving along - lots of sulfur. |

Both samples tasted great. Bock yeast version tasted sweeter. I think I liked it better but we won't know till it's kegged and carved. |

delicious! Cleaner and crisper than the Nottingham version even! I think I like version 2 best myself but these are still solid beers and the slight change in water profile made them more viscous and easier to chug so to speak. |
