Dry hopped per recipe. Beer looks to be darker than expected (amber color). Floaters on top of the beer but could be normal yeast rafts? Smelled fine. Hope it’s not an infection. First time using a yeast starter so I hope that wasn’t an issue. |

Beer looks to have lightened up a bit; perhaps the hops got fermentation going again if that is a thing; temp was bumped up from 65 to 72 one day prior to dry-hop so maybe this is just the yeast working at the higher temp |

Tested gravity with new refractometer. Brix of 7.8. Calculator gives a gravity of 1.011. Need to measure that against hydrometer reading when bottling. Starting cold crash tonight for three days minimum. Will fine with gelatin after temp drops below 50 |

Fined with gelatin per brulosophy (1/2 tsp Knox unflavored gelatin mixed with 1/4 cup water; heated in 7 sec microwave bursts until temperature is 145-150) |

Primed with 5.2 oz DME (no sugar on hand) for 2.3 vol CO2 (4.5 gal); waited wayyyyyyyyy too long to bottle this one; fermentation was likely complete 6-7 weeks ago; won't be too judgmental of this one; strong pineapple flavor coming through the uncarbonated sample; way too much oxidation on my last bottles, so I went slower when filling bottles; if you press the bottle wand abruptly against the bottom of the bottle, air bubbles form and the liquid "glugs"; gently pressing the wand against the bottom causes minimal amounts of bubbles to form; maybe this will help to alleviate some oxidation issues |

Not too shabby! The sweetness that existed in a lot of previous batches is mostly gone; bitterness comes through nicely, but the hop flavor is fairly muted; blame that on the length it took me to package; could have dry-hopped again, but didn't want to waste hops; definitely getting some pineapple flavor coming through with a nice balanced sweetness from the malt; I like this grain bill (Brulosophy MACC IPA); undercarbed; can't tell a difference between priming sugars; minimal oxidation! I think the method of filling bottles slowly (depressing bottling wand slowly rather than abruptly) helped a lot; previous batch had brown and purple yeast that looked broken and laced; these bottles have a creamy tan yeast slurry that pours out at the end; no "broken" lacing and not purple (yet!); this batch gives me confidence moving forward; 4/5 |

Drank the last of the bottles. Held up well. Extremely clear and still had a good taste. Slight bubblegum flavor developed. Looking forward to the next IPA |
