Cachette was out of a few ingredients, including bulk light extract, and the American Wheat Ale yeast, so this became a Frankenstein. Kit sat on kitchen counter for a couple months, during which time I went to Ireland.
The ratio of wheat to barley malt is about 55/45. I've never gone this high. Boil went perfectly.
Was confused why calculator was making my OG so high, and reduced the liquid malts as a result. Then, after finishing EVERYTHING and topping off to 6 gallons, realized I'd put in 192 ounces of steeping grain instead of 12. So OG dropped from 1.061 to 1.036. This is going to be the weakest beer, ever. Probably not very well balanced, either.
