1.0 oz Pink Peppercorns, crushed (5 min.) [DO NOT use pink berries, which are often sold as pink peppercorns)<br />
Zest of one Sevilla orange aka bitter orange aka sour orange (5 min.) [Get at Caribbean/Cuban grocery; Substitute: 4.0 oz. of orange marmalade.]<br />
2.0 oz. Lemongrass, just the white part of stalk, cut into 1-inch pieces and bashed with rolling pin (1 min.)<br />
