After immersion chiller, put fermenter in refrigerator at temperature over night. Pitched yeast this morning at temperature (50-53F). |

GELATIN FINING: Added 1 teaspoon of unflavored gelatin to 3/4 hot water heated to 155F. Poured dissolved mixture into the fermentor. Wait for 48 hours to move to keg |

Moved to Keg - started carbonation for 2.6-2.7X at 11.2 PSI in the refrigerator at 35F. First attempt at gelatin fining. It was EXCELLENT! Very clear beer and all else on the bottom. |

Tried 6 ounces at transfer to keg. It was wonderful. Nice and smooth - but lagering will make it even smoother. Can't wait to drink this one. |

Carbonating and lagering now. To carbonate a minimum of a week and lager a minimum of 2 weeks. Temperature constant at 34F |
