Notes

4.5kg grain so holds 4.5l water
4.5 x 3 means 14l mash water
Estimate 3l evaporation (in the end at least 5) over the hour so 18l boil vol
9.5l run off means 11.5 l sparge water

Strike water 72.7oC
Mash came to 62, where used calc in BF to aim for 65 ending with requirement of 71 strike. For future, add 4-5oC for a 15 l mash. Added 1.5l boiling water.

Mash finished at 62 after starting 65.6, 75 mins

Much higher efficiency than expected, 70% based on wort vol and gravity of 1.038. Had to up batch vol here!

No mash out on this one, just sparse at 78oC water. Could have increased this, didn’t monitor runnings T

After checking gravity of wort, found very high, so did another batch sparse to recover another 4l or so from the grain - still coming out at 1.025 but overall gravity of wort now at 1.038 so stopped, worried about astringency too (no taste of it in final runnings though)

Had to revert to dry yeast after starter too slow (start earlier than 2 days for recovered yeast!). 1 pack of US-05, added dry to wort. Going well when checked inside bucket 16hours after.

Very happy so far with brew, disappointed on yeast prep unrelated to this recipe now. Original recipe states Wyeast 1065. I had planned to use WLP001 recovered, but starter not ready in time. Replacement dry US05 - happy with fermentation progress morning after

Tested after 10 days, appeared not to be finished. After 16 - done. Add hops for 6 days then bottled.
