Short yeast starter yeast was not given enough time to finish attenuating the starter wort. |

Very large quantities of thick yeast.
Yeast is dropping out of suspension and flocculating nicely. |

Clear appearance, golden yellow. Some yeast flocs in suspension.
Aroma is elegant, spicy, floral and herbal. Reminds of a fresh herb bush subdued. Taste begins with sweetness on the palette. There is a malty, biscuity crackery taste then a long transition into a pleasent bitterness. Hard to tell if there is any diacetyl given that the sweetness tastes more like residual unfermented sweetness than buttery.
Looks promising but may remain sweet as the yeast looks like it has stopped fermenting. This is likely due to the yeast starter being added early focusing on less attenuating yeast. |

Had an accident where the water from the blow-off valve got into the fermenter during transfer. Forgot to detach the blow off valve before starting the transfer. Pressure transfer and perhaps making a C02 harvesting unit will help avoid this.
The last bottles done after the keg tasted very bad. Hopefully the entire batch is not ruined.
