Notes
  • The malt I have indicated as American Carapils Dextrin malt is actually Carapils Crushed malt from BrewUK.
  • Heated strike water up to 80c and then ran into mash tun and it dropped to 74c. Mashed in and got 66c. In future, heat up to 82c and mash in at 75c.
  • Using total of 44 litres water for 7.8 kg grain at 3/1 gave 40 litres in boil kettle with BIAB+ 1 sparge, so damn near perfect when using a strong boil.
  • preboil gravity is 1052! Good.
  • Threw bittering and late boil pellits in, but put large grain bag in for large amount of hopstand hops.
    -OG 1060, but only 26 litres in fermentor. Start boil with 41lt.


  • for dryhopping figures, the amount for each hop is for the total 44 litres, so put put half of the listed amount of each hop into each of the 22 litre fermentors, e.g. 22 gr of Southern Cross each fermenter.
  • .6 litres of water absorption per litre of mash water. So with 8 KG of grain you get 4.8 litres absorbed, so you need 37.5 litres plus 4.8 to give 42.3 litres mash water.
  • Heat water to 74 and run to mash tun. Let cool if necessary but mash in at 69c.
  • gravity on day 5 was 1014, so 6.0 ABV. Occasional bubble and very slight carbonation, but I decided to rack to dryhop fermenter. DH #1 Sunday. Laerge rock for leafe bag and 1 marble each for two pellit bags was perfect.
  • DH #2 in bags on day 4 with marbles. 3 large marbles sunk leaf. Pellits needed 2-3 large marbles dep on weight.
  • day 7 of DH I removed all DH from vessle to give beer 24 hours to clear up before bottling.
  • Spring water 2 was fine at 148 gr sugar and 2.4, but last 2 batches were over carbed at 2.3 and 2.2, due to warmer weather. Weather cooling now but I am going with 2.2 carb at 17c and 25 ltrs = 125 gr sugar.
  • SURPRISED. gravity was 1014 on day 5 when I moved beer to secondary. 7 days later it's 1010 (6.5%). Digital IPA had FG 1012.5, so not too far off residual sweetness.
  • at bottling, big hop aroma reminiscent of original and promising taste.
