I started at 11:15 AM. I heated up the mash tun to 120°. I added 4 1/2 gallons of 168° strike water. Today I did something a little different where I added the grain to the mash tun while I was filling it with the strike water. After it settled...
60 - 156.2°
45 - 155.8°
24 - 155.3°
00 - 155°
pH @ 85° was 5.27 and at 76° it was 5.5. |

I came down to the boil barely moving around 27 minutes left. I cranked up the heat and boiled off enough to get 5 1/2 gallons. Everything else went as planned. |

DH today with 2 oz of Hallatru Blanc and Mandarin Bavaria totaling 4oz.
It tasted really good. It’s hard to explain. Definitely had the wheat tang but it a good way. Made me mad for dry hopping it. |
