Successful 2-step mash, temperature control excellent
initial pH 5.9 so added 10ml lactic acid and brought it down a couple of points.
No issues with flow-rate, really smooth |

Awful chill again (60 mins) - this time with the new Blichmann Therminator so must be a pump problem...will try new pump for next brew.
Despite bad chill, lots of trub left in kettle and transfer wort to fermenter was really clear (for a weizen)
Put in Fermentarium at 20oC |

fast stream of bubbles within 8 hours of pitching - yeast is super-active - 8 gravity pts also dropped in this time |

2x full Cornies transferred under CO2.
Hazy and typical wheaty sweetness of the green beer. Will try and force 3 volumes of CO2 into keg |

Typical wheat-sweetness and just a hint of the banana notes, a nice carbonation level achieved at 18psi (3oC) makes it very quaffable.
Excellent first attempt at the style. |
