pH of around 5 at 18.4 C
Note: pH meter struggled to stabilize with this sample.
Pale golden yellow, nice colour. Hints of amber and gold.
Very malty on the nose.
Sweet taste, malty, toasty and bready.
Quickly builds into a sharp bitterness which mellows into the finish. Late finish has some bumpy harsh bitter notes. |

pH is at 5.3 at 19.2 C
Appearance is pale and golden. There is some depth to the colour, a hint of amber.
Floral on the nose. Some hints of citrus fruits. Slight, light fragrance of sulphur. Compared to previous batches sulphur is almost pleasant.
Strong sweetness remains, but then bitterness builds behind. Bitterness builds with some hard bumpy notes into a long finish on the tongue. A tiny bit sharp but hopefully this will round off with time. Behind is a maltiness, a bit of spiciness almost, in a very good way. Tastes nice and I am eager to see how it changes. |

Sample contains some residual material.
Floral and noble on the nose with a hint of sulphur or medicinal notes. It seems like these have increased since yesterdays sample.
Malty and bread on the taste, bitterness build behind the scenes into a long finish. Smooth bitterness on this sample. Slightly sharp at the end of the finish.
Tastes quite rounded already. |

Temperature is now ramping up to 18 C.
pH is 5.2 at 21 C.
Appearance is yellow with a touch of amber hazy in the glass but not too unclear.
First on the nose is sulfur and medicinal notes. A little bit of floral fragrance.
On the taste is a little sweetness, jammy stickiness and then some complex notes, slightly off tasting but not too much. There are a bread and maltiness which gives a nice bite to the taste. Bitterness hides in the background but builds up to the finish. Finish is dry on the palate, a little short at the moment. |

pH at 5.2-5.3 at 20.3 C.
Appearance is golden and clear. Nice clarity already.
Fragrant on the nose with a hint of sulfur. Sulfur builds and obscures other things on the nose. Not sharp, but rounded.
On the taste is a sharpness then sweet honey taste. Maltiness hides behind but is there. Some hints of citrus fruits on the taste but they are weak along with a sharp metallic taste note.
Builds quickly into bitterness with some sharp points. Into a long finish with honey and bitterness. |

Yeast dump.
Some thick sludgy material, probably yeast that was still diluted with fluids. Quickly came out and turned more liquid. |

pH is 5.3 at 20 C.
Appearance is very clear and golden.
Aroma is fragrant and floral. An initial touch of sulfur when straight out of the fermenter.
Bready, malty and rich grain tastes at first. A subtle bitterness hides in the background. The finish feels quite short at the moment, perhaps dry. Medium body. Feels quite balanced between bitterness and maltiness. Not too sweet either.
Could bitterness be higher perhaps?
Could be a little bit drier as well. |

Bottled 4 bottles straight out of the fermenter. Using carbonation drops to ferment while the liquid was around 4C.
Plan is to take these to a beer tasting session and let the rest lager for a further 2 weeks. |

Opened one of the four early bottles.
Clear golden appearance with a thick coarse bubbled head. Head retention is not too good. Appears to dissapear quickly.
Aroma is spicy and fragrent. Not too much from the citrus notes.
Spicy maltiness hits on the taste. Weak bitterness hiding behind the scenes. The bitterness does not build too much so could have been stronger. Finish is long and bitterness does take over. The malty notes are bready, spicy, biscuity even.
There are some strong flavour notes that may mellow with more conditioning. |

Around 16 litres remain after packaging four or so bottles.
75 grams of priming sugar added directly to the fermenter. Stirred lightly and left for around 1 hour. |
