Poured in a few bottles of water to reduce SG a bit. Hit the target by pure luck. |

Weather was cool and I kept the window open. Temps dipped down to high 40's at night and 60's during the day for the first two days. The yeast is still plugging away and seems happier with the lower temps. |

Pitched the result of a pack of US-05 grown in a 1.035 starter for ~36 hours, divided in 3, and refrigerated for about 3 weeks. Oldest yeast that I've used so far and seems great! |

Had an issue with the bottling. Bucket wasn't big enough to hold it all, and the siphon broke at a point where the level was too low to restart. Had to pour from carboy into bucket. |

Citrus and pine scent. Tastes like unsweetened grapefruit - a little sour and a little bitter like when you bit into the rind to start peeling it. Finishes with a little pine taste. The magnum for bittering was perfect. Perle adds that pine taste/smell which is a nice addition. It's not too strong, but could stand to be a little lighter and balanced with a little something fruity at the 30 minute mark. Cascade is good but, like perle, could use some balancing with something else. Rather than changing hops, might be worth trying another yeast - voss kveik. |

Still the same citrus/pine scent. Might be a bit smoother than last time. Aging seems to be mellowing the hops. Probably not a good thing with this recipe. Better to drink it fresh and get the hops balance right. Will try CTZ bittering and centennial in place of cascade next time. The centennial is mostly because of the 1/2 lb in the freezer, though. |
