Citrus version of SRA.

FIRST BATCH NOTES: 5/9/2018
For the first iteration of this beer, the lemon/lime zest is added just prior to flameout, along with a small hop whirlpool. Half an ounce each of lemon and lime zest. I added the juice of 1 lemon and 3 limes (about 1/2 cup total) to the secondary when I fined with gelatin. There was some vegetal flavor to the beer, which I suspect came from boiling the zest. The amount of juice in the secondary was good, but would recommend not boiling the zest again. Maybe try whirlpool or pouring the cold wort over the zest when adding to fermenter.

SECOND BATCH NOTES:
Add the zest of 6 limes to the primary fermenter when pitching yeast. Juice the limes and save the juice to add to the keg when kegging. Should be about a half cup of lime juice. Still got some of the vegetal flavor, next time don't let the vegetal matter sit with the beer for so long. Maybe try just adding zest alone next time.

THIRD BATCH NOTES:
Brewing 10 gal recipe here. Used 9.5 gals strike water, aimed for 14 gals pre-boil volume to fill two fermenters. Used two different yeasts: WY1056 and WY2565 (Kolsch). Added in 0.4 oz crushed coriander seed in muslin @ 10 mins left and left in for 10 min whirlpool as well. Used same hop timing schedule but loral instead of centennial based on availability. Zested 12 limes and 2 lemons and put chilled wort through zest on the way to the fermenter. Then froze fruit until it was juiced, split evenly, and added directly to each keg a few days prior to consumption.
