9.5 gals strike, and it was at 157, which ended up a bit hot. Consider lowering if aiming for 150... Used bag for the first time ever and it seems to work well. True test will be cleanup and efficiency. |

Had a little above 14 maybe, around 14.1/14.2. Taken w/refractometer, will validate with hydrometer. May be slightly higher |

Whirlpooled for 20 mins (unnecessary, but it helped out with hop matter) while I prepped the zest. |

When putting into fermenting vessel, filled first to roughly 5.75 gallons and put half of vodka/zest mixture in the bag that catches hops. Then transferred to second vessel and added the rest of the zest mixture to the bag. The wort filtered through the zest on its way to the fermenter. |

70% POWER WORKED PERFECTLY FOR 10 GAL BATCH. Just above 14 gals pre-boil volume, boil for 60 minutes, end up with just above 5.5 gals in each fermenter. Ambient humidity was in the 40% range. |

Boiled at 70% power for 60 mins. Boil seemed vigorous enough, just took very careful management to avoid boil over. Did 0.4 oz of crushed coriander in bag suspended from the side of the kettle so it didn't get sucked into the pump or touch the heating element for 10 minutes. Typical hop schedule with loral first then cascade. Whirlfloc at 10. |

Kegged first batch on 25th, and second batch on 26th. Set both to high pressure and waited a few days before adding juice. The two yeasts tasted a bit different. The WY 1056 had a sharper bitterness whereas the kolsch yeast was a bit more mellow. |

Afternoon: added the juice of frozen/thawed citrus fruits. 12 limes and 2 lemons made about 2.25-2.5 cups of juice total. The juice tasted a bit off which seemed like it was due to being frozen. Maybe juice same day next time and freeze. We'll see how it turns out. |
