April 5th: Brew day

April 16th: The mead was not ready for bottling. Suspecting either too cold conditions or problem in the yeast. Good news is that the taste was ok. So we’ll just continue the fermenting - we just need more time. Gravity reading was at 1030 (target being < 1010). Let’s try again end of this week.

April 24th: Now the honey mead we made earlier that seemed not to ferment properly has continued fermenting and seems to have developers some kind of sour properties.

May 7th: Bottled 32 0.75L bottles of honey wild mead with some more honey :-) The experiment continues, let’s see where we are after a couple of weeks. Expecting the 2nd fermentation to take considerably longer too so probably two weeks is not enough. Maybe a month? Six months? Who knows?

OG was 1040, FG 1008. Alcohol by Volume estimated to be at 4.2%
