Notes

Brewed on 04/01/18
Mash grains at 155-160 for 60 minutes. Boil H2O and add 4 lbs LME, 1 lbs sugar, 1 oz Jarrylo pellets. Boil for 30 minutes. Add wort from grains, sparge, add 8 oz candy, return to boil. Boil 15 minutes. Add 2 lbs DME extra light, add 2 lbs DME wheat add 0.2 oz homegrown hops (Centennial), add Irish moss, boil 15 minutes. Add 1.5 tsp Fermaid K at yeast pitching. 32 oz yeast starter, 30 hours before pitching.

Sg = 1086 on 4/1/18, Rg = 1019 on 4/15/18, Fg = 1012 on 7/7/18
Took 6 weeks to carbonate. Creamy head with good retention and lace. Smooth, malty taste - very strong Belgium / Biere de Garde. Perhaps a bit to "hot". Beer aged exquisitely. After two years, smooth, caramel, raisin and plums.
