Opened one to see how it's coming along. The rye comes through but overall I think it's a bit too malty as it covers up the rye. A bit of vegetal smell...still has some conditioning to do. |

Rye flavor is mild and coriander is barely detectable. More balanced now and smells better (feedback during Big Brew Day, one of the tasters, who is an experienced judge, said it had a mild bandaid taste, and I once he used that term I knew what he was referencing). Overall it's quite good now. Next time I will increase the rye bill slightly and try to keep fermentation temp down by a couple of degrees. |
