Notes

I'm going to try to use the previous batches trub at the point of transferring that batch to the secondary fermentor. I have a back up if fermentation doesn't start in a few days. I used only maple sap but didn't have quite enough to do a full batch.

I used 6 lbs of DME and maple sap but my OG was 1.082, not the calculated value so I adjusted the lbs to 4.4 but not sure what happened to the sugar....Still could be strong. Could my OG reading be off?

I added 2.75 gal of boiled sap into the fermenter after the first stage of fermenting was complete (likely). OG of the sap was 1.010 for about 2.75 gal. Calculating the OG combined gets 1.049. Now it will be a mellow beer if no bacterial infection.
