Nice ginger flavor. Quite a bit of extract discarded after sparge so we wouldn't have to boil off for too long. |

Added 3 packs of Lallemand London ESB rehydrated in sterilized water last night about 7 PM. Observe some airlock activity and beige krausen this morning, so fermentation appears to be starting. Current temp is about 62, ramping to 64F. |

Fermentation is a monster. Had to add blow off tube and getting massive CO2. |

Fermentation activity has slowed considerably. May already be nearing terminal gravity after such a monster fermentation. That was quick! |

Force carbed using wuick carb. Interesting flavor. Can taste vanilla and molasses. Almost black licorice flavor. Quite nice. Reminds of spiced tobacco. Some residual sweetness but end fairly dry and bitter. Very complex. |
