This was a UBS Brew Day beer at BIS, so a bit of disorder happened. The pilsener malt was very floury, and I intended to use rice hulls but was unable to. So, stuck mash during "fly" sparging. Ended up batch sparging with all of remaining hot spare volume. Total water volume in brew was about 9 gallons. Result: I did not hit target, but missed by only 4 points. Total volume in fermenter was a little over 5 gal, but pitched 1.5 liter starter yeast 4 hours after getting wort in carboy, temperature was about 72 F for total volume. I used 2 large frozen bottles in brew bag, so by morning temp had dropped to 60 F. Strong fermentation but no blown off krause after 12 hours. Removed ice bottles. At 20 hrs temp up to 62 F, more krause but no blow off. |

Fermentation continues in garage ambient temperature, which has been 55-60 F. Brewing bag holding temp of brew at 62 F. When gas production stops, will bring into house for a few days for the diacetyl rest. |

The last 3 or 4 days have been warm, so ferment temperature rose to 70 F, perfect for the diacetyl rest. Fitted an airlock and moved carboy to fridge to cold crash. Aroma is cloves and funk, and taste is a nice blend of cloves, light malt, and caramel. |
