Mashed in with 5.5-5.6 gallons of water.
Increased grain crush to 0.040'ish. Seemed good like shredded/nearly shredded. |

Mash 1: Ran off almost exactly 4 gallons of 1.069 SG wort. Mash was about 45-50 minutes long. Stirred after 40 because it was only at 1.060 or so.
Sparging mash water for mash 2 through grist of mash 1. |

Mash 2 water started at 1.020 from sparging through girst of Mash 1.
Mash 2 ran for about 50 minutes then 10 miuntes at 170 degrees. 1.096 OG, was 1.077 at 25 mins, 1.087 at 45 and 1.096 after mash out. Seems I should have remembered to do the 170 mash step with Mash 1.
Added Mash 1 wort back by sparging it through Mash 2 grist. |

Lots of small material made it through to the wort.
Had to filter with fine mesh strainer, tried getting in kettle but eventually pumped over to buckets through fine mesh strainer then cleaned kettle. |

Boiled for 2 hours and 40 minutes to try to get down to 25.5 liters.
Ended up at 23.35 liters of 1.110 wort. |

Bottled 33 bottls / 3.25 gallons with 45 grams dextrose and 1/3 pack CBC-1.
Added a bit of CBC-1 to remaining beer to protect until I can move to keg with brett. |

Transferred to 2.5-gallon keg with 0.35 oz french oak chips (boiled about 10 minutes first) and 2 oz Henry McKenna 10 year bottled in bond then pitched 1 vial of WLP650 that had best by date of 5/21/18. |

Took a 1 oz sample.
Refractometer reading made no sense with an estimated reading of 1.050-1.060 using this calc. http://seanterrill.com/2012/01/06/refractometer-calculator/
unless 2 oz of Burbon added ~20 gravity points.
Nice mild bourbon burn and slight wood flavor. Definitely can sit for a lot longer. |
