Notes

Steep grains in 2 gallons of filtered water -- heat and maintain 158 degrees for 30 min. Rinse with 1 qt of same temp water.

Add LME -stir to dissolve fully. Add the balance of water and bring to boil. Add hops according to schedule. Chill to at least 78 degrees and pitch yeast. Aerate 20 seconds of pure Oxygen. Ferment at about 67-68 degrees

After 4-5 days add "dry hops" to 2 cups of boiling water and stir into the primary fermentor. After another 5-7 days transfer to secondary, add gelatin to clear. Bottle or keg in another week using 3/4 cup bottling sugar.
