Target mash was 154; temp ranged from 155.5 at 0 min to 151 at 60 min; lost 4.5 degrees over 60 minutes with aluminum kettle wrapped in an old sleeping bag; did not re-light flame at any point |

US-05 took longer to show signs of activity than for the Indigenous IPA; 12-hours in and little sign of activity; rolled fermenter back and forth a few times; 24-hours post-pitch and thin krausen layer started to form; 48 hours in and krausen is growing, lumpy, and gunky; wort/beer has crazy activity; nice creamy orange color |

Looks like fermentation may have restarted? After adding dry-hops, the beer turned from a red-amber, back to the creamy orange exhibited during primary fermentation. Ambient has been sitting close to 64; will ramp up to 72 (space heater) to encourage attenuation |

Target of 1.011; not sure if fermentation is complete; sample smelled great; tropical fruity, pineapple, mango; taste not so great; dry and powdery? astringent maybe? tasted too much like raw hops and not mellow enough; will let sit another day or two |

Pretty undrinkable; similar to the pre-carbonated taste, it was just not that good; tasted like hoppy paint water; that's the best description I can give it; not enough malt backbone, maybe too hoppy for the light amount of malt; not sure where this beer went wrong; I did a few things different that could have contributed to the bad flavors; whirlpooled for the first time, and actually got the water a little too cold (I think 175ish) before adding the addition; maybe these hops just added a steeped flavor that wasn't desired; malt could have been the culprit as well; off-flavor descriptors point to old or moldy malt as something that contributes to the "paint thinner" taste; malt came from Hop City in bham which admitted that they don't sell much of those ingredients; also not stored in air tight container; fermentation was a bit different too; started slower than expected and didn't seem as vigorous; dry hopping caused the beer to look like it re-started fermentation (became hazy and orange); I used a space heater to try and ramp the temp of the closet up, but maybe it heated the beer up too much (heater was pointed directly at carboy for much of the time); FG was a few points higher than predicted; also got a few slightly-gusher bottles (foamed up after a few seconds of being opened); maybe fermentation was weak or incomplete? All-in-all, there were too many different variables for me to identify what specifically went wrong; hoping it's not an infection of equipment; next batch, I'll return to the same process (skip whirlpool, no heater on fermentation; ingredients from a known fresh source); this batch is a dumper :( |

Saved a few bottles in the fridge for opinions on what went wrong, but dumped the rest. I think it's pretty undrinkable; Maggie and Sam said they thought it wasn't bad; I certainly wouldn't want to be served that beer |
