Pitched a pint of my golden sour at high krausen(2 days old) The golden sour pint has Wyeast roselare and dregs from a firestone walker sour opal. |

Slight bitterness. A little tart. Reminiscent of cherries. Really like where this is going. |

Added red wine soaked oak cubes. Cubes were boiled for 5 min, then soaked in wine for a couple weeks. Poured out a couple oz of wine. Added remaining 1-1.5 oz of wine from cubes to beer. |

Not too tart, little bit. No acetic acid flavor. Nice oakiness. Has slight horse blanket, some brett flavor. Slight wine in background. I feel like this beer is lacking in flavor. There is a lot going on, but it is all muted. Tastes flat. Need to add cherries to liven it up and hopefully kick up the acidity a lot and acetic flavor a little. This beer might be a good fruit beer.
Jamies taste test - says oaky, she says it’s not too strong though. Not very acidic, but there is an acidic taste to it. |

Tastes much better. Nice and tart. Good Kreik flavor. Ropey viscosity. I'll wait a while till the brett has fixed the ropiness. |

Tastes great. Perfectly clear. Tart, Jamie thinks it's too tart for her, but I've had much tarter beer. This is not face puckering tart.
Ready for a keg. |
