Target temp was 152; strike water was 159.3 resulting in mash temp of 150.2. Lifted bag and heated twice to maintain temp between 148-150. Might have taken too long to mash-in |

Target = 1.066; close to target, but pre-boil gravity was two points low; could be from light boil (not very vigourous); trying to prevent boilovers; only lost 3 quarts over the entire boil; equipment is predicted to lose 4-5 quarts over an hour; humid day in January could also be the culprit for low evaporation |

Fermentation notes; Wyeast 1272; CRAZY active fermentation for first 48 hours, much quicker than US-05 (dry vs liquid?); had to switch to blow-off tube after 24 hours; 8 days post-pitch and thin layer of krausen is still floating on the top layer of beer. Will wait a few more days to dry-hop and see if it drops |

Dry hop addition: 2 oz Columbus; thin krausen layer still on top; sticky yeast? sticky grist? doesn't seem to be dropping anytime soon; will dry-hop 6 days then test gravity |

Overall, better than the first; 4/5; still has some sweetness that I thought was in the last brew. Equipment? Fermentation temp control? Water? Crystal 40? Low-level infection? Beyond the sweetness tough, this beer has a nice mouthfeel and bitterness that makes a great black IPA. Very subtle toasted/roasty flavor; slight chocolate sweetness; hops are a great contributor to bitterness without overpowering the malts; bitterness lingers a bit too much; maybe cut back on the 60 min addition; also might mash at a higher temp to leave some sweetness and improve mouthfeel |

Drank final bottle; carbonation was a little too high even after settling in the fridge; need to either dial down the amount of priming sugar, or correct for amount that actually makes it into bottling bucket. Mouthfeel was a little thin but still had a good flavor |
