Mash temp was near 160 for first 20 minutes. at 150-154 for 30 minutes, and dropped to 148 for last 10 minutes |

Took both 5.5 gallon and 1 gallon batch from refrigeration to bring temp up to 68-78 degrees for 48 hours. Used large bucket of water and placed fermentation tank in water to control temperature. Temperature was near 68 for first day and rose up to 78 by the afternoon on day 2. put frozen water bottle in water bucket to cool temperature which came down to 70 degrees. |

Temperature during fermentation was 46 degrees for 4 weeks. |

Put both 1 gallon and 5 gallon tanks back into the refrigeration after 48 hours. Temperature on 5 gallon tank was 52 degree for first 24 hours after, kegerator temperature with 1 gallon tank was. Brought temperature down on 5 gallon tank to and set at that temperature. |

Re-racked the Wyeast - Kölsch 2565 into the newest beer I brewed for a California Common (Anchor Steam) batch. |

Re-racked both the one gallon batch in the kegerator and the 5 gallon tank in the garage fridge. Took sample taste and was very off and sour. No sweetness, and was overwhelmingly off . |

Kegged full batch from secondary tank into corny keg. - Temperature stayed at 42* in kegerator. C02 was put in the keg, but the keg would not hold the c02 for more than a week, so the c02 pressure varied for the first 3 months. |

took small mobile dispense and poured 18oz, balance was excellent, head retention was very good. Very malt forward and light colored. Did not seem to be very filtered, but carbonation was strong. Tasted a bit sour/zesty at the end, but beer may still be a little young for drinking. Might be best to wait another month or so. |

Keg sat in cold garage for 2.5 months of winter. Was very good, but had a bit of sour/metalic taste that was a bit off. |
