2.5 gals water boil, add DME, LME

Heat to 175 to pasturize.

Cool to 80.

Pitch Lacto Planatarium (sprinkle contents) 6 capsules Swansons LP

Keep 72 degrees test PH 12 hrs. Target PH 3.25 for 3 Gallons == 3.475 for 5 gallons

Target 3-5 days to sour.

Once pH reached, boil 45 mins.

add hops boil 15 mins. Chill and add water to volume 5.25 gals. Pitch yeast. 10 days. rack to keg.

15psi, 40 Degrees = 2.75 Vols CO2
