mash in
========
Added 4gal mash water and doughed in. The mash was so thick, it was impossible to stir, even after adding in the rice hulls. Added another 1/2 gal of water to the mash, which helped at least with stirring.
Currently (5 minutes in), little of the wort seems to be filtering through the grist. There's a lot of "cloggage." I'm going to try and remember to stir the mash frequently (every 5 min?) so that some filtering happens. |

had extra wort left over (~1/2 gallon) that I had to toss.
The pump became *extremely* clogged while pumping the wort over to the fermentor. The cap to the filter had fallen off, so the spring valve became cloggedby hop/grain material. |

aroma: moderate soft, honey-like malt, coriander, bright orange all balanced together. moderate wheat aroma is distinct. low sulphur detectable, like rotten eggs.
appearance: very light gold. hazy, with only fuzzy shadows of my fingers discernible through the glass.
flavor: medium orange, followed by earthy spice, not obviously coriander. orange is stronger than the spice. some wheaty sweetness with very little hop bitterness, slightly herbal in flavor. finishes very dry but pleasant, with orange, spice, and wheat balanced nicely and lasting awhile. possible low DMS issue.
mouthfeel: very creamy, silky, round. threshold astringency, possibly from the combination of extreme dryness and rather intense orange. still pretty good.
overall: the orange is a bit out of balance with the rest of the beer, but only slightly. it's not an "orange bomb." I wish it didn't have the astringency, though the fault isn't too blatant. overall, very good witbier for my first attempt!
horseradish blend notes:

first sample: 5 drops
barely detectable in aroma, not detectable in flavor
second sample: 8 drops
present in aroma, barely detectable in favor
third sample: 10 drops
very present in aroma, slightly peppery flavor that balances the sulphur and citrus nicely. this was the best sample.
10 drops / 110 ml = x drops / 355 ml (12 oz)
x drops = (10 * 355) / 110 = 32.27
~ 30 drops per 12oz bottle
cranking up the heat to 77°F in the chamber to help clean up the sulphur and DMS. |

packaging notes:
mistake above when calculating amount of horseradish tincture to add; the volume in each sample was 110ml / 3 servings, so ~37ml. This means that 10 drops is about right for 37ml.
10 drops / 37ml = x drops / 355 ml (12 oz)
x drops = (10 * 355) / 37 = 95.95
That's too much to add! We'll have to make do with less, or get more horseradish and make it into a tea to add for extra flavor.
max beer temperature = 77°F
estimated volume = 5 gallons
desired carbonation = 2.8 volumes
table sugar required: 5.5oz
carbonation if 5.5 gallons: 2.65
carbonation if 4.75 gallons: 2.95 |

horseradish wit "5" (50 drops of H tincture)
appearance:
light golden color that is mostly opaque (mit hefe). boasts a thick fluffy white head that falls to a cover and could be more solid. cover of foam is splotchy? could be remnants of horseradish particles. pretty good overall.
aroma:
moderate bread dough with slight sulfur, lighter orange and coriander. a low earthiness that is recognizable as horseradish if you know what you're looking for.
flavor: sweet, doughy, creamy malt. very low bitterness makes the beer seem somewhat sweet. could probably use a bit more bitterness next time. very low orange and coriander flavors are detectable along with the horseradish, just about perfectly balanced. finishes medium, a bit too sweet. I know the FG is about right, but probably more hops would help.
mouthfeel:
smooth, creamy, medium-bodied. could have a bit more body, perhaps? It might be interesting to try a pure-infusion mash instead of the step mash recommended in BCS. I noticed some astringency when I opened one of these bottles a week ago at thanksgiving (a flip-top "full" horseradish) that is "threshold" in this one, but I'm possibly only finding it because I'm really looking for it.
Overall: this is a huge success! Definitely one to brew again!! |
