Notes

Mash at a temperature of 68ºC/155ºF. Mash in and stir for one hour.

Sparge at 75ºC/168ºF,

Bring to the boil and boil for one hour.

Then add the pilgrim.

Reduce to 77ºC/195ºF checking gravity and using cold water to liquor back if necessary. Then add the remaining 100gr hops. Leave to infuse for 30 minutes.

Chill down to 22ºC/70ºF.

Airate cooled wort.

Pitch the yeast and ferment at 22ºC/70ºF.

Add x4 a dry-hop charge (25gr Citra, 25gr Mosaic, 50gr Equinox) at

50% fermented - about 2 days
75% fermented - about 5 days
80 % fermented - about 7 days


and just before cold crashing for at least 24 hours. - about 12 days
