6 vorlaufs and still chunkey. Had to strain for quite a while before it ran clear. Have to check seating of false bottom next batch |

Lots of volume in fermentor. Temp came down fast during whirlpool and through plate chiller. Pitched A07 Flagship yeast (1056) starter after harvesting 500ml |

After fermenting quite cool in the garage (about 56F) brought fermentor in to 72F area for diacityl rest and finishing off. Cleaned up quite nicely |

Filled right to the top of the keg after adding dry hop bag before CO2 purging. Moved to garage for dry hopping |

Two days of dry hopping with 1.5 oz of Centennial and Mosaic. CO2 purged with hop bag at bottom of keg first. This should reduce O2 uptake |

Started cold crashing and carbonating. Tasted a sample and aromas have dropped. Late palate is somewhat earthy possibly indicating oxidation |

Another sample from keg. Fully carbed now and tasting consitently hoppy and bitter in the finish. Slight aroma from the mosaic but I think the yeast and water profile are highlighting bitterness. Even though FG was quite low has a hint of sweetness - not sure if this could be from the UK crystal 30 |
