Wyeast started with 250 ml wort, chilled then mixed with yeast harvested from Brew 41. Approx. 6 hours, then pitched @ 21C. |

Sitting at 21C. This would be an ABV of 3.9%, which is lower than expected but actually fits the Session Brown Ale I was looking for more than the original calcs. |

Mashed 440 g of grains left out of original boil (might be the Melanoidin). 155F, 25 minutes, then boiled for 30 minutes, added a few pellets of hops added (Cascade and Centennial). Chilled in ice bath, then realised I forgot the Irish moss, reboiled to add this (it looks so murky and there's only 500 ml or so). This is a fuck up... |

Definitely infected with what looks like a mould. Smells okay, a little sharp and acidic. |

Not sure if this is an infection as I did add that melanoidin malt late. Anyways, racking from below the mould. |

Bottling this as an experiment, essentially it is vinegar. Primed for 2.4 vols CO2 (actually 161g for 26l). |
