Overshot mash temp by quite a bit. Used cool packs to cool down. Remember that BF calc assumes a 3 degree absorption by mash vessel, which doesn't apply to BIAB. |

Overboiled and ended up with only 4.25 gallons. with a gravity higher than the refractometer could read. Added 1 gallon distilled water back to end up with an OG of 1.112. |

Room temp sample. Lots of chocolate, barely perceptible chili, not much vanilla. Decided to leave it on adjuncts for another week. |

Only about 24 hours with coffee, but flavor and scent is strong, so getting it off the adjuncts. Kegged half. Racked half onto .75 oz oak cubes soaked in 4oz of bourbon. Prior to racking, dumped the bourbon out, rinsed oak and added 4 oz four roses, all of which went in the carboy. |

1 day in keg. The coffee flavor has integrated better. Lots of chocolate, hint of chili. Hope it stays this good for a while. No flaws. |

Sampled the portion aging on oak. Flavors seem to be mellowing. It's a little more boozy. Not much oak flavor. |
