17 oz of Knob Creek.Bourbon and oak chips added several weeks ago. Fermenter moves to garage closed two weeks ago.
FG target of 1.020 not reached, suspect longer specialty grain rest resulted in highs unfermentable sugar content. Strong alcohol task.
Used 2.5oz of sugar to target 2.0 volumes of CO2. |

Used standard refrigerator softened water. 3 gal for the boil... added another 2.5 gal to get total of approx. 4.5 gal.
Grains steeped at ~155-160F for ~1hr
Timing for initial 60 min boil accurate. Timer failed to start... other additions approximate.... no Whirlflock used.... 1 package of Windsor yeast used after rehydrating.... a simple airlock used.. bubbling started within 6 hrs, then the krausen overwhelmed the airlock and blowoff tube installed. Fermentation chamber set at 67F. Carbon temp in 68-70F range... adjusted fermentation chamber to 66F. |
