Ended up adding a second dose of hops to the keg and back sweeting it. The Mad Ferm. Saison blend attenuated to 1.000 AA which was too dry.

Added 1oz Simcoe N2 powder, 1oz Citra pellets, 1oz Amarillo pellets with 9 oz sugar all dissolved in water. Sugar was boiled then hops were added once it had cooled to about 180 degrees. This was all added to the keg with 1.3 grams of rehydrated CBC-1 yeast.

Ended up with a NEIPA pretty much with big melon flavor and aroma.
