Bumped temp up to 68F.
Measured 6.4 Brix, 3.2 Brix corrected.
Dry hopped .5oz Columbus, .75oz Cascade and .75oz Citra.
Tasted like beer. Bitter and a bit grainy, appropriate sweetness and tang. Probably going to be good. |

Light carbonation, yeast is settling but still in suspension. Needs a few more days in the keg.
Tastes like a sour grapefruit, without very much sweetness. Slightly overwhelming bitterness, very tart and acidic. A hint of dankness and a little bit of graininess. |

This has come together really nicely, great balance of bitterness and sweet. Probably could cut back on the acid slightly, will try 35ml next time.
Still not 100% sure about the Columbus, it's a tongue coating bitterness that I don't much like. Would like to try this again with something like Simcoe and cascade.
Update, this needs a little more sweetness, another 4oz of crystal 60 might help. And a little more victory? |

This really came together and is just right in terms of sweet/bitter combo. Still don't love the Columbus but it has mellowed. Going to switch the Columbus to Simcoe/Mosaic for next time.
Maybe just a little more c60 next time? |
