*** Brew Day Notes ***
Pat Kelly and Kevin Lewis helped out with the brew and of course Max the Brew Dog.
MASH: 6.75 gallons @ 163.6F target mash temp. Heated water and over shot to 170F, allowed to cool but it got too low at ~158.00. after dough in it was at 146F, six points low. Dough in at 1103. Given the lower temp I allowed to mash a 14 min longer. @ 1217 temp was 142.1F. Drained first runnings, completed at 1233. Took 16 minutes and ended up with an gravity of 1.057 by Refractometer. Hydrometer read the gravity at 1.055 temp adjusted. Pulled 4.5 gallons of first runnings
Sparged 3 gallons @ 190F which brought the mash to 168F. Doughed in at 1250. Mashed for 20 minutes and drafted off another 2.25gallons.
Pre-Boil 6.75 gallons @ 1.053
Applied flame and achieved boil at 1350 and pitched first hops (1 oz of Columbus) at 1354.
Boil went as planned, 20 min hop addition of 1 oz of Citra, 10 min put in yeast nutrient and wort chiller. ** I was supposed to put in 1lb of sugar at this time but forgot until flame out **
Flame out, checked Gravity and it was 1.060, realized I forgot the sugar and added two pounds since the gravity was way below what it was supposed to be. Added with wort temp of 189F and stired to combine. Added 4 oz of Citra and let stand for 20 minutes. Turned on wort chiller took 25 min to bring down to 70 pulled wort chiller.
Transferred wot plastic bucket fermenter and applied O2 from cylinder for 30 seconds and pitched yeast starter.
OG : 1.079 by Refractometer. Put in basement with blowoff tube to growler filled with starsan. |

First stage starter - According to the recipe I needed 648 Billion cells. Yeast was made June 8th and Brewers Friend estimated the WLP001 pack had ~59 Billion cells. Accordingly I needed to do a two stage starter.
Added 8.2 oz of DME to just under 2L of tap water and brought to a boil. Chilled in sink with water and ice. Chilled very quickly. Transferred to sanitized flask. Added WLP001 and rinsed out with water into the flask on stir plate with sanitized stir bar.
Starter was actively fermenting almost instantly on stir plate and started to krowsin shortly after. Stir bar would not keep a vortex going very well but was able to get it to vortex and at full speed before going to bed.
Woke up the next day with krowsin showing and no vortex. Tried multiple times to get the stir bar to give me a vortex with neg results. Starter was actively fermenting with a lot of haze.
After getting home from work there was less activity but I don't think the yeast had totally dropped out. Let it ride until Thursday morning and pulled it off the stir plate and put it into the refrigerator to crash. |

Pulled from the refrigerator and poured off most of the beer. Agitated with remainder of the beer. Boiled 1.8 L of water with 8.33oz of DME and a half tsp of yeast nutrient, cooled and pitched into the flask. Tried to get the stir bar to work but I think it was way too viskes. Shook it up by hand and fermentation started. Left on stir plate anyways.
This one fermented out much faster and yeast had dropped out by morning. Continued to agitate it manually for the next day. Pulled off stir plate and put in the refrigerator to cold crash that evening. Saturday morning pulled from refrigerator and poured off beer and allowed to warm until it was pitched later in the afternoon. |

Not fermenting the way I thought it would be with a big beer and large yeast starter. The growler is foaming but no steady gurgling. |

Still mild fermentation in the blow off tube. It did have Krosin in it and I did clean it out with some starsan. Also gently rocked the bucket to get the yeast back into suspension. Buckiet Temp is 70F which is 5 degree's higher than the recipe calls for. |

Pulled blowoff tube and put in airlock. No real sign of fermentation I really need to open this thing and take a gravity reading. |

Nice bittering yet still a bright flavor. Beer is clear and amber color. No floaties
Added 5.1 oz of Citra that was hanging out in my freezer I had forgotten about. Bought it in March of 2016. See how it goes |

A lot of grapefruit notes, is darker than it should be. I am concerned about Oxidization. Time will tell |
