reading comes from refractometer after the reading I got from the hydrometer seemed impossible (90.8% conversion???)
original hydrometer reading = 1.044 |

swirled and pitched 1/2 of the starter (yeast didn't flocc well), saving the other half for some later batch.
filled to upper ring around carboy base, which is ~5.75 gallons. almost up to the neck including the yeast, hoping that the yeast doesn't make a mess, since experience thus far has shown that it is a relatively tame fermenter. |

Aroma:
Moderate pineapple and overripe papaya esters, with somewhat lesser
chocolate/light-roasted coffee. Moderately high lemongrass, pineapple, freshly
cut grass hop aroma. No DMS, diacetyl, or acetaldehyde detected. Very feint
sweet, perhaps honeylike malt aroma.
Appearance:
Very dark black that is only slightly transparent around the edges of the
glass. Tan head comprised of very tight bubbles. The head is very thick and
creamy, often about 50% of the total pour, which is somewhat annoying to sip
through. Appearance should be clearer for the style.
Flavor:
Pine, pineapple, papaya are prominent, followed by some tartness and roast. The
roast and tartness clash somewhat, and I wish the level of roasted malt was
lower. The hop flavors go together well, though the yeast flavor is the most
adventurous, and I wish the hop flavors were more on-par with that. The tartness
is nice and subtle, but it does clash somewhat with the roast, which lasts into
the finish. I would reduce the amount of midnight wheat next time.
Mouthfeel:
Medium-modied with high carbonation. An extremely creamy mouthfeel that reminds
me of guiness. I would never guess by the mouthfeel that this beer was sub-4%
ABV. Very nice. |
