stirred twice
mashed for ~3 hours
thought I may have added a bit < 3ml lactic acid at first, checked gravity halfway and wasn't pleased, so added a bit more acid and mashed another hour.
did not stir before sparge. sparge went very quickly. |

I think I boiled for too long.
Only got one good steep of the hop bag and removed ~10 minutes before the transfer to carboy was complete, because gloves were insufficient to protect against the heat of the bag. Set the bag on the counter, so didn't want to chance contaminating the wort with the soiled bag.
Pitched whole starter. Starter smelled of acetaldehyde and possible chlorophenol, along with some black pepper/threshold funk. |

FG slightly higher than anticipated.
Aroma is very complex: strawberry, grapefruit, pineapple, back pepper, mild funk.
Flavor is pretty grassy and isn't as intense as the aroma. It's more bitter than anticipated and not very fruity (yet).
Racked on top of ~2oz each of chinook & belma in the keg. Let sit at ~40°F for almost 10 hours @ 10PSI, then turned up to 35PSI to force carbonate. |

- Disconnected the gas line
- rolled keg on floor for ~30 seconds to help absorb some of the extra C02 in headspace
- vented excess CO2 with a screwdriver
- reconnected the gas line and turned pressure down to 10PSI for serving later this afternoon
Going to wait ~5 hours before attempting to connect the liquid line and serve. |
