Probably going to see an average brewhouse efficiency increase across the board, because I realized that 6 gallons isn't as much as I thought it was. I just discovered that the plastic carboys have markings on the side to measure volume, and just slightly under the neck measures 6 gallons, which is a consistent fill line for me.
Putting this one in the closet at ~74F, no temperature control because lager is occupying the fermentation fridge. |

Fermentation schedule:
====================
A few hours after brew day, noticed ferm temp was ~74F, which I felt was too high for starting, so I moved into the fridge at 68F.
Stayed at 68F for 2 days.
Moved beer out of fridge at that time and let sit in closet overnight @ 70F.
Moved beer to "hot area" of closet just now, hoping to hit ~74 - 78F to finish out fermentation. |

off-flavors:
- oxidation (temp probe cap lets in air? the tubing?)
- some hot alcohols (temp got too high, too fast for this yeast)?
just barely not bad enough to keep
lagering at 40°F for a week or two to see what that does.
ideas:
- add some sour/funky stuff
- add some fruit
- dry hop
will likely rebrew (again) this beer for David as a saison, seeing as how all my temp control equipment is occupied by the dunkles bock right now. |

racked into the pin-lock keg
had to reuse the same gas line as was already connected to the NEIPA, because the tubing has to be narrower on the inside than the vinyl tubing that I already have. I also need to buy more of those brass connectors for hose, since I only have 2 remaining, and I'll need another pair if I want to have those for 2 kegs at the same time.
I sampled this beer a few days ago, and lagering had substantially improved it on all fronts. There was no alcohol detectable in flavor/aroma IIRC, though still seemed somewhat oxidized. As I was racking into keg, I heard a "sizzling" noise from the bottom of the carboy somewhere. There was also a lot of some kind of liquid at the bottom of the fermentation fridge. Putting the pieces together, I'm worried that this carboy has a leak in it somewhere, might be time to turn this one over and get a stainless steel bucket.
Racked enough beer that purging the headspace of the keg was not possible after beer had made it in there... it's too full. Hopefully this turns out OK. |
