Not real impressed, yeast says it was manufactured back on 6/20, which might mean it's completely dead / expired. Going to try making a starter, start with 3.5 oz DME in 1 Liter starter. If it looks positive, step up to 5.5 oz in 1.5L mid-week. |

Got starter spinning at around 4:00pm today. Put in 1/2 tsp nutrient with it. We'll see. Have also sent email to AIH to let them know they are shipping expired yeast. |

This morning, the starter looks right... it's gone light brown/tan and milky. Probably can put in fridge tonight, decant and start again tomorrow. |

Decanted and upped the starter tonight.... should be in good shape for Sunday. Plan to just let it spin and pitch the whole thing at that point. |

Mash temp after 30 was 145-146, this is as low as I've ever gone.
After another 30 sparge water isn't quite up to temp, so letting it sit (9:49).
Do same as last batch, 90 minute boil, put in 1/2 hops at 30 and 1/2 hops at 5 (hops AA is 5.3%). |

9:55 ... Put in sparge water, set timer for 30 minutes. Temp before sparge water add had fallen to like 143 |

Ok, so that's pretty much right on target.
26 * 7.4 = 192.4 / 5 = 1.038, at 5.5 it's 1.034 ... so should come out about right. |

Yeast pitched about 1:40, final volume closer to 5.5 gallons after adding yeast, which would land this right at 1034, 5.4 gallons (the starter was 1.6L).
Temp control at 52, wort was cooled to approx. 56. |

This looks finished, but the FG seems a bit high yet; let it sit in the bucket for one more week.
The color is very nice, deeper that prior batches, very golden.
Sample is fridge to cool for taste; has some sweetness to it at hydro temp. |

Needs more carbonation time; probably tomorrow morning will turn it down and check.
Taste is right. Color is nice. This should be good to go with correct carbonation. |

I gotta get this gone to make room for the next three beers. Had a glass last night. I still don't taste the oxidation, barely get the apple. Tastes fine to me. Oh well. With Covid can't really hit it hard to get it gone, so might have to bottle what ever is left. |
