Notes

Like all Belgians do NOT overdo the coriander. First batch you do, dose a portion of the finished with a light amount to find what's right -- it should be a very subtle background flavor. For warmer weather, add more tropical notes like Lime, Grapefruit peel. For more winter feel and flavor, consider spices like nutmeg or a soak of cranberries and a secondary fermentation.
