Notes

Follow up to "Straight Up Pale".

The first was to develop a base beer with no dry-hopping.

The second is to up the hop profile of the base a little and then follow up with dry-hopping.

Dry hopped with Amarillo pellets in the bottom of the secondary keg before transferring from primary.

Second dry hop with Simcoe pellets in the the top of the secondary, small exposure when cap off hopefully countered with CO2 purge immediately after hop addition. Left for 3 days before bottling.

This is the third (version 2 with dry-hop). All hops in boil before primary unlike last time when I added some pellets into the fermentor before transfering the wort. First addition of dry hop pellets (Amarillo) was in secondary vessel before transferring beer. Second addition of dry hops (Simcoe & Lemon Drop) added 3 days before bottling. Total secondary was one week.

Bottle conditioning hit optimum flavour and carbonation after 4 weeks in cellar at 10 degrees celsius.
