Was WAY over on the water, by 6 qt. Got 7 gallons of beer, and 73% efficiency! No necessarily a bad thing...
I will check my immersion chiller for leaks.
I think I was too generous on the dead space.
Adjusted profile down by 4 qt, will try again with the Kolsch. |

Looked inside the bucket, there is still a krausen head in there. I was expecting to bottle this weekend. Perhaps the yeast is stalled out because the house got down to 60 several times. I fermented this cold, maybe that was a mistake? Anyway, will check again next weekend. |

Still has krausen head but appears to be breaking down. Took a taste sample through the sipgot. No off flavors. It is thin on body, but that is to be expected due to the extra 1.5 gallons of water. |

Tastes great, excellent floral nose, carmely slightly roasted flavor, a bit thin but will be very drinkable! |

Thin tasting but still drinkable.
The priming sugar flavor in the bottled part of this batch is going away now too. The more I taste this yeast the more I think it belongs in dark beers. |
