Scaling the recipe down to 2 gallons. As such, ingredients were:
* 2# brown sugar
* 1.17# fresh ginger root
* 2 lemons (zest and juice)
* 2 tsp cream of tartar
* <1/8 tsp cayenne pepper |

definitely dried out a lot more than I wanted...but still tastes pretty good. A nice, even burn, but not too much. |
