racked to secondary added american white oak dowels and a touch of the bacteria I am using for my lambics. did this to recreate the flavors you would get from barrel ageing in england around this time period. |

soured quite a bit in only a month. going to bottle tomorrow. flavor and aroma are nice, very roasty but also the sourness cuts that a bit and gives a lighter mouth feel. |
