Mashed in 12 lbs of grains into 7.5 gallons water at 160 for strike temp of 154. Add 1.5tsp calcium chloride and 1.5 tsp gypsum. Pot was almost full.
Lost about .75 gallon. Pre boil volume 6.75 gallon.
Pre boil grav 11.9 brix 1.047 sg
Post boil volume 5.25 gal. 1.5 gal per hour?
Post boil grav 1.060 (hydro and refractometer match)

Probably should have waited a few days to keg this. Noticeable yeast strata about 10 inches from the top of the fermenter, but did it anyway. Added one tsp biofine to keg before racking.
Carbed at 30psi for one day, then down to 10, then back up to 20, then back to 11. I'm not very smart. Currently a nice level of carbonation.
After 3 days in the keg the yeast has settled down but is still noticeable. Beer is very cloudy, not sure if that's mostly yeast or other particulate.
Flavor - nice bitterness, great mouthfeel. Appropriate brightness, big improvement over previous extract attempts. Hop flavor is strong, aroma is a bit weak but present. Simcoe plus Cascade is a nice combo although I might be getting a bit sick of the simcoe or maybe it's slightly overpowering in this beer.
Could probably dry hop a bit of cascade or cites? in the keg. Color is much more pale than expected, more gold than a typical pale ale.
This should be very serviceable in a week. |

Still very cloudy. Creamy, sweet and bitter, tastes like an orange rind. Great carbonation, great hops. Stacey says it tasted like a Belgian to her which totally makes sense |

Dumped. This was clearly an infection, still had the hefeweizen flavor even after it cleared, and was getting more sour and astringent. Flushed lines with starsan. |
