Notes so far on ingredients:
Some of these ingredients have made such an impression on me that I feel it worthwhile to note my experiences now.
* Weyermann Floor-malted Bohemian Pilsner Malt
This grain is intensely grainy, in a robust husky/nutty sort of way. Light and sweet like other pils malts, this one seems to have another character I've never tasted before in pilsner malt. Not unpleasant, but strongly detected. I wonder how this will work out with saison yeast?
* Liberty hops
As soon as I tossed these in the boil, the kitchen was filled with the sweetest floral aroma I'd experienced in a long time. I haven't used noble hops recently, so I can't really compare them to hallertau, etc. Still, the aroma is absolutely beautiful. If the hop character in the beer turns out half as well as the aroma now implies, I'll have to use these again. |

Filled large glass carboy almost to the neck (incl decanted yeast starter).
Collected also 1800ml wort to use in brett starter.
Plan: allow sacc to ferment wort until decanted brett starter is ready to go. Then, pitch part of the brett starter and save the rest for later. |

I've been keeping this one as close to 85F as possible. It's already starting to develop a slight brett character! Tastes fruity, bright and refreshing. High hopes for this one, and no rush for bottling it. |
