Did not take a reading after mash.
After addition of water hit 144 degrees F, which is about 8 degrees to low. But better to err on lower than higher. At 20 minutes added, 2 litres of boiling water. Raised mash temperature to 150 - 152 degrees F. for the remaining 40 minutes. Ended up being a 2 step infusion, but not on purpose. |

Flash cooling took about 1 hour. I need a longer syphon from brew kettle to flash cooler (20'). It's pinching at the top where the copper inserts into the food grade tube. If I can eliminate that kink, it will cool in 30 minutes. |

Pitching yeast once aeration complete and temperature is at 65 degrees F. Going to try a slower fermentation at this temperature. This is the low end of the range recommended by Wyeast. This will be the 4th iteration of this awesome yeast. |

More ABV than Otter Creek but the taste profile is spot on. As an alternative to a barley wine, which can be too strong and often in small sips, this is an awesome finishing beer that you can drink in 500ml quantities. |

Maybe it's the magic of bottle conditioning and enough time at work again. This is just as rich and malt-layered as Otter Creek's original masterpiece. It has really developed into a first class beer. |
