mash in

Mash was so full, it nearly came to the holes on the sides of the grain basket. This is likely the maximum volume the mash basket should hold.
Stirred once about 15 minutes into the mash. Samples wort: tastes *very* sweet. The mash evidently goes well. Very grainy, doughy, especially wheat-y flavor. |

back from gym ~5pm, gave mash another stir.
current gravity = 1.075
estimated volume = (6.25 - 1.6) = 4.65
dilution with water to 7 gallons = 1.050 |

~8.75 gallons @ 168F
Sparge water overheated to 188F, so I added ~1 gallon cold water to cool it to 170F. Used all of the sparge water and collected *a lot* of wort. Sparge went really fast, so worrying about efficiency in this one.
First measured gravity was 1.035, which I collected by dipping a small glass into the wort right after the sparge was done. The calculated efficiency was 53.4%, which seemed too low. Based on the last measurement of the mash (4.65gal @ 1.075), this measured gravity is not possible.
New reading, collected by dipping the refractometer into the wort indicated a gravity of 1.050. |

Added 10oz cane sugar, since I thought I would miss the OG by a few points. Looks like I probably didn't need that after all to hit 1.075 (would have hit 1.075 without sugar, I estimate, which was the original OG of this recipe).
Reflected sugar addition in recipe (wasn't there previously). |

Added dry hops:
* 3oz Citra
* 1oz Rakau
Fermenter has signs of blowoff already having happend (stuff stuck to the top of the carboy), so now's hopefully the safe time to add hops without worrying of their being blown through the tube. |
